What's the difference between a pressure vacuum breaker and an anti-siphon valve?
My understanding is that they are both back flow prevention devices for sprinkler systems

They both do pretty much the same thing. A PVB is just a larger version. When incoming pressure drops to near zero, the vacuum breaker will open to prevent back siphonage.
These are typically used in low hazard applications.
More serious applications will require a dual check (DC) or a reduced pressure principal device (RPZ).
