Why is my truck overheating so strangely?

Water pump and heater core replaced within the last year
So basically I was driving down the interstate yesterday in 90 degree weather and my truck started overheating. I pulled over and let it cool down.
I got back on the road and continued to drive with the temp half between C and H and did so for like an hour with no problems.
I hit a town in stop and go traffic and it started getting hot (like it always does)
Usually once I hit the interstate it will cool down again from the speed of wind...this time it didnt, it refused to go down in temp.
I pulled over, let it cool, and traveled another 2 hours with no problems.
Why does my vehicle overheat, and why does it refuse to go down in temp unless I pull over? and then it runs great as long as I dont hit another stop and go scenario.
I have a 98 Ford Ranger, basically the same truck that you have as Mazda and Ford are made with the same parts. I have removed the thermostat from mine to help it maintain an even temperature in the summer, I think the problem lies in the thermostat (not being a low enough trigger temperature) and the blockage of flow that it causes even when it is open, and the fan may be a bit too small. Keep a close eye on your coolant level too, as even with the thermostat out I had an issue with it getting hot (I forgot to remove the piece of cardboard in front of the radiator, I use it in cold weather to help it heat up without the thermostat in) and it did just as you described, it would start to cool down and then even while running at highway speed it would start getting hot again. I found that I was a little low on coolant, once I refilled it was ok again. Try the thermostat, either remove it or get one with a lower temperature setting. They are quick to replace, just need a wrench and either a new gasket or some gasket maker. I would recommend draining your radiator first, into a bucket if you want to re-use the coolant, as you will make a mess when you remove the thermostat cover otherwise.
